Stuffed Gluten Free “Oreo” Brownies
The Gluten Free Nanny recommends the use of Trader Joe’s, Gluten Free Joe Joe’s cookies , Betty Crocker Gluten Free Chocolate Brownie Mix and Betty Crocker Rich and Creamy Frosting to get the best results.

These brownies can be made several different ways.
Candy Cane Joe Joe's can be used for a holiday themed dessert.
You can substitute peanut butter for the frosting for a different taste.
For chocolate lovers, substitute chocolate frosting for vanilla.
Preheat oven to 350(F) degrees or what is stated on the brownie package and line a 12 muffin cup baker with paper liners.
Prepare brownie mix according to package directions.
Prepare "oreo" cookie stacks first. Spread 1 teaspoon of frosting on top of one cookie and stack another cookie on top of the frosting to form a sandwich. In each lined muffin cup, place about 2 teaspoons of brownie batter on the bottom. Place 1 cookie stacks on top of the brownie batter.
Spoon about 2 tablespoons of brownie batter over each stack of sandwich cookies and let it run down the sides of the cookies. Tap the muffin tin gently on the counter to ensure that the batter has ran down the sides of the cookie stacks. Bake cookies and brownies for 18 to 20 minutes, until brownies are cooked through. Let cool completely then serve.
