Savanna Red Rice and Smoked Sausage

Ingredients

  • 2 Cups
    Chopped Onions
  • 2 Cups
    Chopped Bell Peppers - Red or Red and Green
  • 2 Cups
    Chopped Celery
  • 4 Tablespoons
    Bacon Grease or Butter or Oil
  • 1 Pound
    Smoked Sausage diced
  • 1 Teaspoon
    Minced Garlic
  • 1-2 Tablespoon
    Hot Sauce or to Taste
  • 2 Cups
    Tomato Sauce
  • 28 Ounces
    1 large can of Diced or Crushed Tomatoes with juice
  • 2-2.5 Cups
    Chicken Stock
  • 2 Cups
    Long Grain Rice
  • To Taste
    Pepper
  • To Taste
    Salt
  • 1 Teaspoon
    Sweet or Smoked Paprika (optional)

Instructions

  1. Preheat oven to 350 deg.
    In a large pan over medium heat, saute onion, celery and bell pepper in bacon grease / butter or oil.
    In a separate pan brown sausage in a little oil.
    Add the browned sausage to the onion mixture
    Add the minced garlic. Continue to cook about 1-2 mins
    Add tomatoes, hot sauce, tomato sauce and chicken stock
    Season with salt, pepper and paprika to taste.
    Stir in rice. Saute until rice is coated in oil and well mixed, about 1-2 minutes.
    Pour mixture into a greased casserole dish . Bake covered for 30-35 minutes. Uncover and bake an additional 10-15 minutes until all liquid is absorbed. If rice looks to dry add a little more liquid ( water or chicken stock) Fluff with a fork and serve.

    I’m not gluten free and I loved it! I think it is better as a side dish but it also works as a main dish too.
