I lived with undiagnosed food allergies for years that were exacerbated by a surgical procedure. Through an endless series of testing, it was determined that I have severe reactions when I eat foods that contain gluten and dairy.
I have been gluten and dairy free for over four years. Subsequently, my daughter was diagnosed with celiac disease via genetic testing and has been gluten free for over three years.
I have always loved to cook for my family and friends, especially on big holidays. This presented a challenge for me, given that the foods I enjoy and have cooked for years often contain gluten and dairy. Since my diagnosis, I’ve been on a mission to learn how to adapt to this new dietary reality, while continuing to cook and eat tasty food. I’ve learned a lot about sources of gluten free products, cooking techniques and substitutes. And I continue to cook foods that non-gluten free people love to eat.
Eating at restaurants and traveling present unique challenges. Gluten Free can sometimes be viewed as a “choice” and not be taken seriously by restaurants. When traveling, language can become a barrier. Finding cuisines and dishes that my non-gluten free family and friends can enjoy and I can eat has been my mission and critical to maintaining my health.
